This is a really easy project. I had some succulents that needed replanting and this is what I came up with.

Great recipe for the cool fall weather coming up (please cool down So. Cal)! We usually end up making this one when we get down to the last of our chicken from our roast.
1 1/2 lbs boneless skinless chicken breasts (or your left over chicken from your roast)
5 medium carrots, peeled and chopped
1 medium onion, chopped
4 stalks celery, chopped
3 cloves garlic, minced
3 Tbsp extra virgin olive oil
6 cups low-sodium chicken broth (3 – 15 oz cans or from your stock)
1 cup water
1/2 tsp dried rosemary
2 bay leaves
Salt and freshly ground black pepper to taste
2 cups uncooked wide egg noodles
3 1/2 Tbsp chopped parsley
1. In your slow cooker, put chicken, carrots, onion, celery, and garlic.
2. Pour olive oil over top then add chicken broth/stock, water, rosemary, bay leaves and season with salt and pepper to taste.
3. Cover and cook on low for 6 – 7 hours.
4. Add egg noodles and parsley to slow cooker. Increase temperature to high, cover and cook 10 minutes or until noodles are tender.

We are planning a trip to South East Asia.
Vietnam, Laos, Cambodia and Thailand to be exact. Neither of us has ever been to this part of the world so we are pretty excited to put these pins in our map!
To be honest, we never really even considered exploring this area. Maybe someday, when we went every where else on our ever growing bucket list. Funny how life throws you these little nudges. A few years ago we met a person who started out as a client and has since become a good friend. He is one of the most generous people we have ever met. (this is his company by the way) A few months ago he wanted to take us out let us experience food from his home country, Vietnam. Wow. Fabulous. I was hooked on the food alone! We bought our plane tickets 2 months later.
We had been looking for an epic trip to take to finish off our first year of marriage. We saved and saved and researched and dreamed and saved. It started as a joke, but the more we researched and learned about these South East Asia countries the more we wanted to go. Not to mention the exchange rate is just right 🙂 We decided to do something a little different with this trip. We obviously know where/when we are arriving and departing, but everything in between is just going to be day by day. There are some places we know we really want to see so we will work around that.
Here is a little bucket list of places we would like to see so far. But remember don’t hold us to any of these because we may change our minds once we get there!

Ha Long Bay
In northern Vietnam, this is one of the world’s natural wonders. The Bay is dotted with 1,600 limestone islands.
War Remnants Museum(Ho Chi Minh City)
This museum, once known as the ‘Museum of American War Crimes’ first opened to the public in 1975. It’s a shocking reminder of the long and brutal Vietnam War.

Luang Prabang – Northern laos
Located in northern Laos, is an important yet charming little town that features former royal palaces and more than 30 temples, old French colonial architecture as well as beautiful natural sites.
Fiery and crammed with herbs. How could you not want to try it with that description?

Kalasin: Dinosaur hunting
The northeast province is known for its large hoard of dinosaur bones. The best place to check them out is the Sirindhorn Museum and Phu Kum Khao Dinosaur Excavation Site.
This one is pretty easy. The pictures pretty much sum it up. The sausage was already seasoned so all we did was put a little minced garlic in the pan and grilled everything together.

After the meat is just about done cut it up and grill to brown the sides. Serve with spaghetti (whole wheat), red sauce and garlic bread.
