SLOW COOKER SPLIT PEA SOUP

One of this family’s all time favorite soup! This recipe is one of the better homemade split pea soups I’ve done. The consistency is thick and can be adjusted to be bland or spicy as you like.

Slow Cooker Split Pea Soup

Ingredients:
– 1 tbs extra virgin olive oil
– 1 red onion, minced
– 3 carrots, scrubbed and chopped
– 3 ribs of celery, chopped
– 1 tbs minced garlic
– 2 cups green split peas
– 6 cups chicken broth
– 1 bay leaf
– salt and pepper to taste

Directions:
1. Chop and mince all vegetables. Rinse and sort split peas (check for stones).
2. Put all ingredients into the slow cooker. Stir occasionally.
3. Cook on high for 5 hours.
