Sugar Snap Pea Salad
– 2 cups sugar snap peas
– 1/2 bunch radishes
– 2 tbsp. fresh mint, torn
– 1/4 cup goat cheese, crumbled
– 1/4 tsp. salt
– ground pepper to taste
– 2 tbsp. balsamic vinaigrette dressing
1. Cut snap peas in half length wise and put in bowl. Wash and cut radishes into thin coin shapes, add to bowl.
2. Add remaining ingredients to bowl. Pour dressing on top and mix.
