Easy & Tasty Chili
Note: This recipe makes a lot! About 12 cups.
Ingredients:
– 1/4 cup extra virgin olive oil
– 1 large yellow onion
– 1 large red onion
– 4 medium red bell peppers
– 2 medium yellow bell peppers
– 2 tsp. minced garlic
– 1 tsp. salt
– 2 tbsp. chili powder
– 1 tsp. ground cumin
– 1 tsp. jalapeno powder (or spicy chili powder of your choice)
– 1 tsp. dried oregano
– 1 tsp. ground pepper
– 2 (28 oz.) cans of diced tomatoes (do not drain juice)
– 2 (15 oz.) cans of red kidney beans (drain and rinse)
– 2 (15 oz.) cans of black beans (drain and rinse)
– 10 dashes of hot sauce
Directions:
1. Dice onions and peppers. Put all onions and peppers in large pot with oil over medium heat. Cook (stirring frequently) for 10 minutes.
2. Add garlic, salt, chili powder, cumin, jalapeno powder, oregano and pepper to pot. Cook (stirring frequently) for another 10 minutes.
3. Add tomato cans (do not drain juice) to pot. Bring to a boil. Reduce heat to low and cook uncovered for 30 minutes. Peppers and onions should be tender.
4. Add beans (drain and rinse) and hot sauce to pot. Cook for another 5-10 minutes.
5. Serve hot!
