MOM’S GUINNESS BEEF STEW

Mom’s Guinness Beef Stew

Ingredients:
– 1 Tb vegetable oil
– 1 pound beef stew meat, cut into bite-size pieces
– salt to taste
– 4 cups assorted cut-up fresh vegetables (potatoes, carrots, celery, and onions)
– 2 cups broth (beef, vegetable or chicken)
– 8 oz can tomato sauce
– 1 bottle/can Guinness

Directions:
1. Heat 1 tablespoon of oil in large skillet. Add cubed meat and salt; cook until browned on all sides. Remove from skillet and set aside.
2. Put assorted veggies, tomato sauce, broth and Guinness in slow cooker. Add seasoning (salt) to taste and stir.
3. Add cooked, cubed meat to slow cooker. Be sure the met is fully covered with liquid. If not, add water or more broth.
4. Cook on high for 5 hours. Check tenderness of meat.

SLOW COOKER TURKEY CHILI

Slow Cooker Turkey Chili

Cook on low for 6-8 hours

Ingredients:
– 1 lb. lean ground turkey
– 2 tsp. + 1 tsp. olive oil
– 1 cup onions, diced
– 2 tbsp. minced garlic
– 2 tsp. chile powder
– 1 tbsp. ground cumin
– 1 tsp. oregano
– 1 1/4 cups salsa
– 1 can (15 oz.) pinto beans, rinsed and drained
– 1 can (15 oz.) red kidney beans, rinsed and drained
– 1 can (16 oz.) low-fat refried beans
– 1 cup beef/vegetable broth

Directions:
1. Heat two teaspoons olive oil in a large frying pan, add the ground turkey and cook about 10 minutes or until browned. Remove turkey and place in slow cooker.
2. In the same pan, add the remaining 1 teaspoon of oil and add onions. Cook until they start to brown. Add the minced garlic and cook for 1-2 minutes. Add the spices (cumin, chile powder and oregano) and cook another 2-3 minutes. Add onion mixture to the slow cooker.
3. In the same pan, add broth and refried beans. Mix until well blended. Add to slow cooker.
4. Rinse and drain pinto and kidney beans. Add to slow cooker.
5. Add salsa to slow cooker.
6. Stir ingredients together and set cooker to low. Cook 6-8 hours.

HEALTHY CAJUN SAUSAGE STEW

Healthy Cajun Sausage Stew

Ingredients:
4 cajun seasoned sausages, cut into medallions
4 red potatoes, cubed
1/2 yellow onion, diced
1 tsp. minced garlic
1 can black beans, washed and drained (or use 1 cup of your own)
1 can minced green chilis
2 cans chicken broth (or use 2 cups of your own)
1 6 oz. can tomato paste
1 tbsp crushed red peppers

Directions:
1. Put all ingredients in the crock pot.
2. Cook on low for 6 hours (or high for 4 hours).

WARNING: A little kick in this one!

Easy Pot Roast

Ingredients:
– 1 tbsp. minced garlic
– 1 onion cubed
– 2 cups chicken broth
– pot roast (3-4 lbs.) thawed or frozen

Directions:
1. Add all ingredients to crock pot.
2. Cook on high for 6 hours.
3. Enjoy!
